Black Bean Wraps

You know how some food just seems fresh? I often refer to that kind of food as "good summer food." It's not so much creamy and warm as you might like something to be during the fall and winter. We're talking cool, crisp and fresh food here.

This recipe is just that.


Black Bean Wraps
3 Tortillas
1 can of black beans
About 1/2 cup of salsa
1 pkg. of cream cheese, softened
About 4 oz. of shredded cheese (I like Pepper Jack)
Fresh spinach
Roasted red peppers
Shredded chicken (optional)

In a food processor, combine black beans and salsa. Process this until both are mixed well. Set aside.
In your cleaned out food processor, combine cream cheese and shredded cheese. Process until both are mixed well.
Lay out your tortillas and spread the cheese mixture evenly between the three.
Next, spread some black bean mix on top of the cheese. (You'll probably have leftover black bean mix...I always do but who wants a half-used can of black beans).
Lay the spinach leaves out next.
Top with roasted red peppers and chicken if you so desire.
**Tip: Leave about an inch on one side of the tortilla so that when you roll it up, all your stuff doesn't squeeze out that side.***

Roll up the wrap. You can leave it whole or cut the wrap into about 5 pieces. This is great to do if you want to serve this as an appetizer.
